Hideaway Beach Resort & Spa Maldives has appointed Olivier Ramos as its new Executive Chef.
Originally from France, Olivier obtained his culinary diploma back in 1990 and moved to Paris to gain experience with the renowned Chef François Clerc. He then traveled to Bermuda, Spain, and the US, and held positions at prestigious hotels such as the Ritz Carlton in Boston.
Working abroad, he learnt to adapt his cooking to different palates, experimenting and sharing with his team. Olivier loves working with quality produce, where the fantastic flavours are able to shine through, and using only a few ingredients he able to create mouthwatering dishes.
Countless recipes later, Olivier is now sharing his passion and creations as Executive Chef at Hideaway.
Since joining the resort, he has wowed and impressed guests with his culinary delights such as the ceviche of king fish, with a light vinaigrette and some freshly grated lime. Another mouth-watering treat is the tartare with wagyu beef – a classical recipe with an addition of soya to bring out the sweetness and tenderness of the product,” an announcement read.

Located in the northernmost Haa Alif atoll, Hideaway Beach Resort and Spa is accessible by a 50-minute domestic flight followed by a 15-minute speedboat ride.
